Pho Weather


The MegaStorm of 2010 had a strong influence on tonight's dinner choice. It's been so cold around here, as the weatherman said coldest temps in 20 years, the only thing I wanted today was something WARM. DH picked up Pho Noodle Soups and Spring Rolls on his was back from his ALTA mix tennis match. Nothing warms the inners more then a big bowl of hot, spicy and meaty noodles. In fact I had to turn down the heat after dinner.....well actually that's not true, but it does sound good.

Way too full


I was too full from lunch to have dinner so here is a picture of what I had for lunch. It is 4 Mini Burgers with House Special Ketchup from The Counter. The Mini Burgers were absolutely delicious and it was accompanied by Fried Onion Strings and Fried Sweet Potatoe Fries. I also ordered my favorite Chili in the ATL. The Counter is one of priceier version of a hamburger joints but it is so worth the money.

Friday Night Roast


Tonight I made Pot Roast with onion, carrots and potatoes and served it with Garlic mashed potatoes. It was made in a slow cooker with cream of mushroom soup and a few secret ingredients. Week one is over and I only skipped 1 day. Yay me.
This week I will try at least one new recipe so stayed tuned.

two-fer




Since I didn't post yesterday's post on time I 'm going to talk about today's lunch as well. Today for lunch I had chinese dumplings and cappucino. The dumplings were homemade by my parents and filled with a pork/veggies mixture. All I had to do was boil them for about 12 minutes. The dumplings were warm, perfectly seasoned and just delicious.

It started to snow here in the ATL this afternoon and that made me want to make something hearty for dinner. I had purchase frozen mini cheese ravioli a couple of months back and I thought it would be great with vodka sauce. So I decided to make a pasta bake with the ravioli. I browned ground turkey and onion ,added a little bit of my own seasoning ,mixed it with the vodka sauce pour it over cooked ravioli topped the whole thing with parmesan cheese, baked for 30 minutes covered and 30 minutes uncovered. Heated up the left over steamed broccoli and dinner is served.


Bad, bad blogger


I FORGOT! I took the picture of dinner last night but didn't post it. Yesterday I had a long day of baby playdate, misbehaving dogs and misplaced grilled steak taco, so when DH joked about something meaty and cheesy for dinner I said PIZZA! DH brought home a stuffed crust supreme pizza from Pizza Hut and it was very delicious. I didn't think I would enjoy the stuffed crust but that was actually the best part. Now on to today's post.

Oopsie!


So sorry I packed up dinner before I took a picture. I read somewhere that it takes 8 weeks to turn a routine into a habit, so on day 5 I forgot to take a picture of dinner. With that said dinner was delicious. My family came over tonight with lots of food. We had steak stir fried noodles, Ma-po tofu, steamed broccoli and pan fried potatoes. The steak stir fried noodles was made specially for my DH. I like Tuesday dinner because it is a completely brainless meal for me.

Paper Plate Special


This week DH is working late so dinner is going to be something quick and easy because I have to feed the baby and make dinner at the same time. Tonight we had Chicken Quesadilla, homemade guacamole and mixed steamed veggies. I sauteed 2 chicken breasts with cajun spices, shredded the cooked chicken then mixed the chicken with mexican red sauce. Then I took the mixture put it on flour tortillas top it with cheese, pan fried it and viola dinner is served. The quesadilla was a big hit and the steamed veggies wasn't too bad either. Tomorrow night is Grandparents night, so yay no cooking for me.
